I find Bretonnia to be the easiest campaign to complete. Missle units tend to be the most useful ones in the game for killing capacity and spearmen can hold the line and protect them from cavalry (lord, hero, 2 spearmen, 14 archers, 2 bolt throwers is my go to army early on).
